The term ajinomoto means Essence of Taste’
Ajinomoto is the trade name of crystalline ‘mono-sodium-glutamate’
It is considered that ajinomoto increases the fifth taste named ‘Umami’ in
Japanese. Umami is the meaty taste or savouriness.
Mono-sodium-glutamate is generally present in fermented food products, meats
and vegetables like tomatoes, broccoli, grapes etc.
