Apple Kuchen (Apple Tart)

Preparation:

  1. Preheat the baking pan to 400F.
  2. Lightly grease 13-x-9 x 2in baking pan. 
  3. In a medium bowl, sift flour with sugar, baking powder, and salt. 
  4. With pastry blender, cut in 1/2 cup butter until mixture resembles coarse crumbs. 
  5. Add beaten egg, milk, and vanilla and stir with fork until the mixture is smooth. 
  6. Spread batter evenly on the bottom of the prepared pan. 
  7. Arrange apple slices, thin sides down and slightly overlapping in parallel rows over the batter. 

Make topping:

  1. Combine sugar, cinnamon and melted butter. 
  2. Sprinkle sugar mixture over the apple slices.
  3. Bake 35 minutes or until apple slices are tender. 
  4. Remove to wire rack. 
  5. Mix apricot preserves with 1 tablespoon of hot water. 
  6. Brush over apples.
  7. Cut kuchen into rectangles and serve warm with whipped cream.
